Pumpkin Bread Recipe

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
1 cup brown sugar
1/2 cup butter flavored shortening, softened
1 cup chopped walnuts
1 teaspoon vanilla extract
1 cup milk
2 cups canned pumpkin


Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch loaf pan. Whisk together the flour, baking powder and salt. In a separate bowl, mix together the eggs, brown sugar, shortening, walnuts, vanilla and pumpkin. Combine with flour mixture, mix well and pour into loaf pan. Bake for 40 minutes. Makes 1 loaf.
